Standing Stone Heritage Pork Stew Meat (Avg Weight 1.0 lb pk / Cubed)
The "Ready-to-Braise" Essential — Deep Flavor, Zero Prep. This is the shortcut to the world’s best comfort food. Sourced from our partners at North Georgia Meat Company (NGM), our pork stew meat is hand-cut primarily from the Boston Butt (shoulder). Unlike the lean, dry "stir-fry" strips you might find elsewhere, these cubes are laced with the intramuscular fat and connective tissue inherent to Heritage breed hogs. This means they are designed to stand up to long cooking times. Instead of drying out, they absorb the flavors of your sauce and become meltingly tender, releasing a rich pork flavor that fortifies the entire pot.
Why It’s a Staple: It saves you the messiest part of dinner prep. We have done the trimming and cubing for you, so you can go straight to cooking. It is the mandatory foundation for authentic New Mexican Green Chili, a hearty Posole, or a quick weeknight "Carne Adovada." It offers the flavor intensity of a slow-roasted shoulder in a fraction of the time because of the smaller cut size.
The Specs:
-
Brand: Standing Stone (in partnership with NGM)
-
Cut: Cubed Pork (Shoulder Source)
-
Source: North Georgia Meat Company
-
Diet/Breed: Heritage Breed Pork
-
Portion Size: Avg 1.0 lb Pack
💡 The Chef’s Method: Brown, scrape, and simmer.
-
The Dry: Pat the meat dry with paper towels. Wet meat steams; dry meat sears.
-
The Sear: Working in batches, sear the cubes in hot oil until they are dark brown on all sides. Do not crowd the pan, or they will boil in their own juices.
-
The Fond: After searing, you will see brown bits stuck to the bottom of the pot (the fond). Deglaze this with wine, beer, or stock and scrape it up—this is pure flavor.
-
The Braise: Return the meat to the pot, cover with your liquid of choice (salsa verde, broth, tomato sauce), and simmer on low.
-
The Time: Even though they are small cubes, they need time to get tender. Plan for 1.5 to 2 hours of gentle simmering.
-
Target Texture: Fork-tender and shreddable.
