💡 The Chef’s Method: Render it down to make Tallow.

  • The Prep: Chop the fat into small pieces (or run it through a food processor while cold). The smaller the pieces, the faster it renders.

  • The Render: Place the fat in a large pot or slow cooker on low heat. Add a splash of water to prevent burning at the start. Let it melt slowly for several hours until the liquid is clear and the solid bits (cracklings) are golden brown.

  • The Strain: Pour the liquid through a fine-mesh sieve or cheesecloth into a glass jar.

  • The Storage: Once cooled, it will turn white. It keeps on the counter for months or in the fridge for a year. Use it just like butter or oil.
