Sourced from our partners at North Georgia Meat Company (NGM), our American Wagyu Stew Meat consists of generous, hand-cut cubes from the Chuck and Round primals. Typical grocery store stew meat is often lean and inconsistent, turning into "rubber bullets" if not cooked for an eternity. Our Wagyu version is different. These cubes are laced with intramuscular fat that renders out slowly during the cooking process. This not only keeps the meat incredibly moist and tender but also thickens your broth or gravy with rich, savory beef tallow.

💡 The Chef’s Method: Build the flavor, then let it ride.

  • The Dry: Pat the cubes dry with a paper towel. Wet meat steams; dry meat sears.

  • The Sear: This is the most critical step. Sear the cubes in batches in a hot Dutch oven until they are dark brown and crusty. This "fond" on the bottom of the pot creates the deep flavor of your stew.

  • The Simmer: Add your liquid (wine, stock, beer) and scrape up the brown bits.

  • The Time: Simmer low and slow (or use a slow cooker) for at least 2-3 hours.

  • Target Temp: Fork Tender. The meat is done when you can smash a cube easily against the side of the pot with a spoon.
