  • The Baste: Sear for 2 minutes per side, then drop the heat. Add a knob of high-quality butter, a crushed garlic clove, and fresh thyme. Spoon the foaming butter over the steak continuously for the last minute of cooking.

  • The Rest: Let it rest for at least 5-7 minutes.

  • Target Temp: Rare (125°F) to Medium-Rare (130°F). Do not cook this past Medium-Rare, or you will render out the expensive fats that make it special.
