A Chateaubriand is a luxurious French dish featuring a thick, center cut from the beef tenderloin (filet mignon), known for its exceptional tenderness and mild flavor, traditionally roasted and served for two or more people with a rich sauce like Béarnaise or a red wine reduction. Originally a method to cook this large cut perfectly, it's now synonymous with the premium cut itself, symbolizing fine dining for special occasions.

Key characteristics:
  • The Cut: The very center of the beef tenderloin, a large, thick roast.
  • Flavor & Texture: Extremely tender, lean, and delicate, benefiting from flavorful sauces.
  • Serving: Meant for sharing, typically serving two to three people.
  • Traditional Sauce: Often served with a Chateaubriand sauce (shallots, white wine, tarragon, butter) or Béarnaise.

Preparation: Often seared and then roasted, or cooked whole, to achieve a perfect medium-rare center.

How it differs from filet mignon:

While both come from the tenderloin, Chateaubriand is the large, central portion, whereas filet mignon refers to smaller, individual steaks cut from the tapering ends of the tenderloin.
